NATURALLY GROWN SUSTAINABLE, COOPERATIVE FARMING AND COFFEE PRODUCTION

We source from across the Nation including our own partner plantations.  We also co-fund a Wet Mill Factory that besides processing its own cherries, buys from neighboring coffee plantations and farmers at premium prices and processed under our strict quality controls. 


Our production facility uses strict berry selection protocols and quality focused processing standards, together with state-of-the-art technology to enhance, protect and preserve the flavor of our coffee. 


Our company policies mean that remain steadfast on continuing to work cooperatively with external growers and pickers as well, to ensure community prosperity and sustainability. We also fund research that helps to manage the Coffee Berry Borer Beetle, which is devastating crops across the world.

Our farming methodologies are very low impact, with little-to-no fertilisers or irrigation required due to the nature of the meso-climate offering timely rains, and nutrient rich soils.

OUR NURSERY

Seedlings

Our dedicated Siphonix Sustainability Team ensures we have an ever increasing and renewable stock of strong Arabica coffee plants. This allows us to both expand our plantations, and also regenerate our estates, to ensure a sustainable supply of high quality beans.

KINDERGARTEN

1 Year Old

From the nursery to the kinder, our seedlings are introduced to an open environment allowing them to stretch and strengthen their trunks in the breeze, and to acclimatise to a natural growing environment.

INFLORESCENCE

Flowering

Inflorescence is the flowering stage of the coffee growing cycle. This young tree has a blossom of fine white flowers along its stems. Once pollinated, these pretty flowers will fall, and begin to forma a small pearl-sized berry.

CHERRY FORMATION

Firm & Green

The now green coffee cherries have filled to a size where they will begin to focus their energy on the creation of the coffee bean...this of course becomes the reproductive part of the plant, if left to nature, will fall and grow another plant. At this stage the cherry is firm, sour and bitter to the taste.

RIPENING

Ready for Harvest

The cherries have now moved through a phase of ripeness from green, to yellow, then orange, bright red, then the wonderful deep red cherry colour. At this stage, the physiology of the cherry has changed to 'ripe'. This means not only has the outer fruit flesh of the cherry accumulated sugars and reduced acidity, but the bean (seed) is now also physiologically ripe enough to grow another plant. This ripening not only invites the birds to eat and scatter the precious cargo within, but it also signifies the time to harvest for coffee production, as we know it.

HARVEST

The Gold is Within

Each now ripe cherry yields two ripe seeds/beans. On our estates and partnership plantations, and adopting hand harvesting principles to preserve and protect quality, only the ripest cherries are targeted and picked, leaving the others to ripen and picked at a later date. These cherries are collected in the full form, and quickly transported to our processing facility for the next stage.

FIRST SORTING

Colour and Defects

Our pickers are very busy in the fields and occasionally inadvertently collect under-ripe or blemished/damaged cherries, which if not removed, will affect the ultimately quality of the coffee. These defect can present as unwanted flavours or mouthfeel, in various forms.

WASHING

Washing/Preparation

Now the cherries are very much uniform in colour with only high quality cherries now remaining, and being washed clean of dust and other organic matter which has collected on them in nature. It is a beautiful mosaic of nice ripe cherries ready to be milled.

DEPULPING & FERMENTATION

The Metamorphis

During the Siphonix Wet-Process coffee production method, the fruit portion of the cherry is removed by a depulping machine, extracting and separating the beans, for the next stage, being fermentation. The fermentation process digests the remaining sweet sticky pectin-rich membrane that surrounds the beans. This occurs either in special fermentation troughs. The beans are then finally washed free from this now mobile natural casing.

DRYING

Sun-dried Perfection

The beans are now nurtured to near complete dryness in the 100% pollution free pristine Papua New Guinea environment. The beans are repeatedly groomed and turned by a team of experienced coffee driers who know exactly how to accelerate the drying process whilst avoiding further fermentation or mold developing.

CONTAINMENT

Quality Control

In this penultimate stage Siphonix tests the final moisture content of the beans and checks for any defect beans. Delivering consistent high quality coffee to our customers is paramount to us success, and that of our buyers.

PARCHMENT REMOVAL

Final Product- Green Bean Ready for Your Roaster

Although the bean can now be safely stored with its outer shell, in this final stage we process the bean to remove the fine layer to delivery a 'green or raw' bean ready for market. The green beans are bagged, batched and tagged electronically within our coffee management software, and either ready to fulfill export orders, or to be processed for our own roasted coffee brand and markets.

WEIGHING

Checkpoint

The common sack weight for export orders for green bean is a 60kg sack. Every sack is double weighed to ensure it meets the minimum weight requirement. One twenty foot container holds approximately 19,200kg of our Siphonix Green Coffee Beans.

STORAGE

Safe, Dry, Tidy, Tagged

Each allotment receives an individual and designated identification number, which is logged to our coffee inventory software, and allocated to a client's order. In our system we can track and trace each batch back to our Estates, farms, cooperative partners, growers, or pickers. This traceability offers us integrity of product, authenticity of origin, and dedication to delivering quality.
